Oven Roasted Salmon with Dill and Lime

Merry Christmas everyone! Though this isn’t a very Christmas post, but most people would be out at gatherings with their family or friends pigging out on delicious Christmas feasts.


This post is perfect for those looking to detox after the holidays or to meet their New Years Resolution of eating healthy and clean. Also, it’s easy to make and also a perfect dish for a dinner party, as you can make quite a few on a baking sheet and cook this all at once in the oven. It is refreshingly delicious with minimal effort!


 

Oven Roasted Salmon with Dill and Lime

Serves 1


Ingredients:

1/2 tablespoon extra virgin olive oil

1 salmon fillet (about 6 ounces)

1 clove of garlic

1 lime or lemon (whatever you have on hand)

1 tablespoon fresh dill

1/8 teaspoon kosher salt or to taste

1/8 teaspoon pink peppercorn or black peppercorn, cracked

Directions:

  1. Preheat the oven to 450 degrees F.

  2. Wash the salmon filet under cold water, and then pat dry with a paper towel.

  3. Find a baking sheet or oven-safe skillet, and line with parchment paper.

  4. Place the salmon on the parchment paper.

  5. Crush the garlic in a garlic press.

  6. Rub the crushed garlic on both sides of the salmon fillet.

  7. Season both sides with kosher salt and freshly cracked peppercorns.

  8. Sprinkle with fresh dill.

  9. Slice the lime and line the top of the salmon with half of the slices of the lime.

  10. Place the salmon in the preheated oven to bake for 10 to 12 minutes. No need to flip the salmon!

  11. Serve immediately.

Notes:

Optional - You may remove and discard the cooked lime, and then put fresh lime and dill on top of the salmon. - I did this for presentation.
